After you add water and beat it a few minutes, you enter a place where cake and dessert decorations have never gone before: Incredibly delicate lace, for example, or monograms that look sculpted. Or a cascade of dots you can make in a flash, all rounded to perfection. Even an amazingly paper-thin ‘fabric’ you can gather into waves.

Why a gown of icing? Before the innovation of SugarVeil Icing , cake decorations were rigid, had to all be painstakingly, meticulously piped by hand, and were not especially flavorful. What better way to show good-tasting SugarVeil Icing’s flexible nature than a model wearing it and moving around a gallery for hours?
Wedding cakes and an edible SugarVeil bridal gown premiered at silversmith artist Robyn Nichols’ annual exhibition in Kansas City, Missouri, demonstrating the icing’s flexibility and the many innovative textures possible by smoothing onto a flat surface to make “fabric” you can cut into pattern pieces, spreading onto Confectionery Mats to quickly produce intricate design motifs, stenciling to make appliqués that attach with a tiny bit of moisture, combing into lines with the Confectioners’ Comb , or applied with the SugarVeil AirPen Piping Dispenser . It was inspiring to culinary professionals and created a buzz.
Except for the train of netting, the entire dress was made of SugarVeil and was entirely edible.
A subsequent gown was created for the National Restaurant Association annual conference in Chicago, with gloves of stenciled SugarVeil appliqués, stocking seams, hair ornaments, a bridal bouquet of roses, ribbons, and ruffles of SugarVeil, and a bridal veil using the Dot Veil Mat.
